Vanilla Fig Compote



A fresh and sweet topping that goes great on muffins and other sweet treats. Very easy to make and free of tons of food allergens.

Ingredients

1 1/2 cups fresh figs, stems trimmed and cut into quarters
2 tbsp honey (Butternut Creek Honey Farm)
1/2 cup water
1 tsp ground cinnamon (Simply Organic)
1/2 tsp vanilla extract (Simply Organic)
1 tbsp coconut oil (Nutiva)

Directions

Place the figs, honey, water, cinnamon, and vanilla extract in a small saucepan over low heat. stir occasionally and cook for 30 min. Remove from the heat and stir in the coconut oil while the mixture is still warm.

Using a food processor, process until the mixture is smooth and has reached a spread-like consistency.

Serve immediately or store in an airtight container in the refrigerator for up to 2 weeks.
