Ingredients
2 C cubbed fruit: pineapple, kiwi & banana 1/4 C honey 2 C raw cashews 2 Tbsp vanilla (Highlands Summit) 2 Tbsp coconut oil melted (Carrington Farms) 1/2 C water (optional: berries, cherries for garnish)
Directions
Soak cashews in water for 2 hrs.
Pulse cubbed pineapple and kiwi in blender or food processor. Set aside.
Drain water from cashews. Pulse cashews, banana, water, coconut oil, vanilla and honey until smooth.
Divide 1/4 cup cashew mixture and 1/4 cup fruit mixture into small serving bowl. Serve and enjoy!
(Can garnish with other fruits if desired)
