Pumpkin Loaf Swirl



Nothing exemplifies the fall season better than this thick, moist & creamy loaf of pumpkin bread. It's the perfect dessert for the autumn season or a nice treat while watching the big game.

Ingredients

LOAF
1 cup canned pumpkin (Farmers Market)
1 cup plus 2 tsbp granulated sugar divided
½ cup firmly packed brown sugar (Wholesome Sweeteners)
4 egg whites, divided
½ cup almond milk (SoDelicious)
¼ cup melted coconut oil (Carrington Farms)
2 cups gluten free flour (GF Jules)
2 ½ tsp. baking powder (Rumford)
2 tsp. pumpkin pie spice
¼ tsp. salt (Real Salt)
1 pkg. dairy free cream cheese, softened 9 (Go Veggie)
½ jar of date jam (2oz.) (Sully's)
Optional: crushed pecans

FROSTING
1/2 cup unsweetened canned coconut milk (Native Forest)
1 cup sweetener - not baking (Just Like Sugar Table Top)
1 tsp pure vanilla extract (Highlands Summit)
pinch salt (Premier)
1/2 cup tightly packed coconut butter (Artisana)

Directions

LOAF
Preheat oven to 350° F. Grease a nonstick 9×15-inch loaf pan; set aside. Mix pumpkin, 1 cup granulated sugar, the brown sugar, 3 of the egg whites, almond milk and oil in large bowl. Add gf flour, baking powder, pie spice and salt; stir just until moistened. Set aside. Beat df cream cheese, remaining 2 tbsp, granulated sugar and the remaining egg white with wire whisk until well blended.

Spoon half of the pumpkin batter into prepared pan; spoon cream cheese and date mixture evenly over the batter. Cover with remaining pumpkin batter.

Bake 1 - 1 hr 5 min or until wooden toothpick inserted in center comes out clean. Run knife or thin spatula around edges of pan to loosen bread; cool in pan on wire rack 10 min. Skip to frosting while you wait.

FROSTING
Have ready all the ingredients at room temp.

In any style blender, place the coconut milk, sweetener, vanilla, and salt. Blend until smooth and the sweetener is completely dissolved.

Add the coconut butter last and blend until very smooth, translucent and gummy. Pour into a bowl.

Pour over bread. Let cool and serve.
