Hot Cocoa Pancakes



Combining 2 winter time favorites, these pancakes are a delight!

Ingredients

PANCAKES
1 C pancake mix (Really Great Food Company)
1 C almond milk ( So Delicious)
1 egg
1 tbsp liquid coconut oil (Nature’s Way)
1⁄4 C hot cocoa mix (Just Like Sugar Guilt Free Hot Cocoa)
1⁄4 cup chocolate chips (Enjoy Life Mini Chips)
Add water to desired consistency

TOPPING
1 can coconut milk (Native Forest) or pre-made dairy free whipped topping (So Delicious CocoWhip)
3 tbsp hot cocoa mix (Enjoy Life Mini Chips)
1 bag mini marshmallows (Elyon Mini Marshmallows)


Directions

PANCAKES
Mix all ingredients together in a medium sized bowl. When mixture is at desired consistency pour on griddle. While pancakes are heating on griddle begin working on the topping.

TOPPING
Pre-Made Option: Use So Delicious CocoWhip topping.

From Scratch Option: Place can of coconut milk in fridge overnight. Take out of fridge and flip upside down. Remove liquid from top of can and place remaining hardened substance in a chilled bowl. Whip the cream with hand mixer.

Once the whipped topping is prepared and in a bowl, add the cocoa mix and combine. Add marshmallows and mix together.

Finally, apply topping mixture to finished pancakes and enjoy!
