Cinnamon Roll Pancakes



Maybe the most creative pancake recipe you'll find. If you like cinnamon rolls (check!) and pancakes (check!), then you'll LOVE these!

Ingredients

Pancakes
1 C pancake mix (Really Great Food Company)
1 C almond milk (So Delicious)
1 egg
1 tbsp liquid coconut oil (Nature's Way)
add water to desired consistency

Cinnamon Filling
2 tbsp brown sugar (Wholesome Sweeteners)
4 tbsp (1/2 stick) dairy free butter - melted (Earth Balance)
cinnamon as desired

Cinnamon Cream Cheese Glaze
4 tbsp (1/2 stick) dairy free butter - melted (Earth Balance)
1⁄2 tsp vanilla extract (Highland's Summit)
3⁄4 C powdered sugar
2 ounces of dairy-free cream cheese (Go Veggie)

Directions

Filling
Heat the butter for the filling over low heat until melted. Turn of heat and add in the rest of the filling ingredients and whisk together. Put in zip-lock bag.

Glaze
Heat the butter for the glaze over low heat until melted. Turn of heat and add in the rest of the glaze ingredients and whisk together. Put in zip-lock bag.

Pancakes
Mix all pancake ingredient together in a medium sized bowl and pour over griddle. Once pancakes are on the griddle and bubbling, cut a corner of the zip-lock baggie for the cinnamon filling and squeeze the bag so you can swirl in the cinnamon filling (ideally in a circular fashion). Flip pancake. Repeat with each pancake until batter is gone. When ready to serve, cut zip-lock bag of glaze and squeeze over pancakes and enjoy!
