Chocolate Covered Strawberry Pancakes



Nothing says I Love You more than a stack of warm pancakes. But we took it one step further and added a traditional Valentines Day favorite: Chocolate Covered Strawberries! Enjoy responsibly.

Ingredients

Pancakes
1 C pancake mix (Namaste or Pamela's)
1⁄2 C almond milk
2 eggs
1 tbsp coconut oil (Spectrum)
1⁄2 C strawberry preserves (Nature’s Hollow)

Topping
a few strawberries
chocolate syrup (Santa Cruz)
1 can coconut milk (Native Forest)


Directions

Pancakes

Option 1: mix all pancake ingredients and pour on griddle

Option 2: Mix all pancake ingredients except strawberry preserves and pour on griddle. Before flipping pancake, scoop strawberry preserves into cake icing gun (or zip lock bag with end cut off) and draw in designs of your choice (we did hearts and swirls).

Topping
Place can of coconut milk in fridge overnight. Take out of fridge and flip upside down. Remove liquid from top of can and place remaining hardened substance in a chilled bowl. Whip the coconut milk with hand or standing mixer until soft peaks form. Add stevia to desired sweetness.
